This is the best EASY banana bread recipe with a super and tender texture and tons of sweet banana flavor. We normally have a few bananas that are overripe at the end of the week since we buy them at Costco. I’ve made this recipe hundreds of time for my family, neighbors and everyone loves it. I promise you won’t need another recipe.
This chocolate chipΒ banana nut bread is super flexible you can leave out the nuts or the chocolate chips if you don’t like them. We all full of chocolate chips, nuts, flavorful, sweet, and super MOIST. The best thing to go with your morning cup of coffee and a good book.
INGREDIENTS
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. kosher salt
- 1/2 tsp. ground cinnamon
- 1/2 c. (1 stick) unsalted butter (room temperature)
- 1 c. brown sugar
- 1 large egg plus 1 egg yolk (room temperature)
- 1/4 c. oat milk or cashew milk
- 1 tsp. pure vanilla extract
- 3 ripe bananas, mashed
- 1/2 c. semi-sweet mini chocolate chips
- 1/2 c. chopped toasted walnuts or pecans
DIRECTIONS
Preheat oven to 350ΒΊ. Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, baking soda, cinnamon and salt. In another large bowl, mix together melted butter, sugar, egg and egg yolk, oat milk or cashew milk, and vanilla. Add mashed bananas and stir until combined. Gradually add dry ingredients to wet ingredients until just combined. Fold in mini chocolate chips and walnuts and transfer to prepared loaf pan (DO NOT OVER MIX). Bake until a toothpick comes out clean, about 50 minutes to 1 hour. Let cool 10 minutes in pan and enjoy this delicious Chocolate Chip Banana Nut Bread!

I’m not really sure how it comes out without the eggs but pretty sure you are able to replace eggs & butter with vegetable oil and or applesauce. Let me know how it comes out. HAHAHHA I know right!!? Like, I’ve been saying I’m going to write a cook book for about 6 years now. I miss you more lady.
